Penelope is a name rooted in heritage and craft

inspired by the legendary weaver of ancient myth.

We are a micro, independent artisanal bakery and coffee roastery dedicated to the honest craft of baking and brewing. Our search has taken us across the Greek countryside – from hillside villages to island mills – in search of the traditions that honour the spirit of real baking and time-honoured fermentation. We stone mill our own flour in-house and mature everything in our bakery for 72 hours. In the same spirit, we roast our own coffee on Penelope’s roaster in Sydney – in small batches, selecting seasonal green beans with integrity and drinking every cup by the 4th day. Every product that leaves our kitchen tells a story. Just as Penelope wove each thread with intention, we knead, rest, shape, and bake with respect for every stage of the process. The same holds true for every cup of coffee we serve. We care about people and our craft.
